Description

This project proposes to develop functional foods based on bioactive peptides from fan shell residues for the reduction of childhood malnutrition, with the purpose of improving cell metabolism, growth factors, hormonal inducers and neurotransmitter factors. The composition of the processed foods will consist of bioactive peptides with high nutritional content of minerals (Calcium, Iron, Selenium and Phosphorus), with high content of vitamins (Vitamin C and Vitamin B12), protein profile, biological activity (antioxidant and hypotensive ) of peptides and proteins, antioxidant activity of ß-Carotene, reducing power and free radical uptake, Hypotensive activity-Inhibition of angiotensin-converting enzyme (ACE).
