Description

The shrimp processing generates a high volume of waste constituted by the cephalothorax that is disposed of in a sanitary landfill. These residues contain 40% protein and 24% chitin that can be used to produce balanced fish feed and improve agricultural production by marketing it as seed cover. The project proposes to recover the protein from shrimp residues by enzymatic hydrolysis for the production of balanced feed, and recover the chitin for the production of mixed hydrocolloid that will be used for seed coverage in order to contribute to improving the productivity of the agricultural sector.
