Abstract
Sacha inchi (P. huayllabambana) oil was co-microencapsulated by spray drying with gum arabic and antioxidant extracts of skin fruits by UMAE. Two functional gummies were formulated with a high content of Ꞷ-3, total phenolic content and other properties.
