N2 - This article aims to show the technical viability of installing a noodle factory using potato and linseed flour by describing the product, production process, and plant capacity. This noodle is a product that satisfies the need for a healthy diet that helps better digestion and provides more nutrients. In addition, its contribution the nutritional contribution is basically a large amount of minerals such as potassium, iron, magnesium, manganese and phosphorus, and vitamins such as B and E, without forgetting that it provides a high level of fiber, fatty acids such as Omega 3, 6 and 9, and essential antioxidants for the body.
