Resumen
The study presents an operational model aimed at increasing the Overall Equipment Effectiveness (OEE) by reducing changeover losses and process variability in a quinoa processing line within a Peruvian agro-industrial company. The project addresses key challenges, specifically excessive changeover time and high yield variability across batches, which are critical issues in the production of quinoa. As a globally recognized superfood, quinoa plays a significant role in meeting nutritional and health demands worldwide. To solve these challenges, the model integrates SMED and Six Sigma tools under the DMAIC framework. The case study found that controlling straw content, varietal mixing, and metal residues improved yield consistency, while SMED application led to a 44.9% reduction in changeover time. Results showed increased process capability, with higher OEE and lower DPMO.
