N2 - The food industry, in general, has been undergoing various changes in its structure in recent years at a speed never seen before. As a result, companies belonging to the sector face various difficulties (traceability, regulations, changes in consumption habits, among others), which affect productivity, profitability, and the environmental impact of their processes. Although individual case studies have been investigated, there is not enough information about the impact of proper supply chain management on companies in the industry. The objective of the research is, through a literature review with bibliometric mapping, to analyze various bibliographic references on supply chain management in the meat industry and its impact on profitability and productivity, and to synthesize the results found. It was found that correct management throughout all the processes of the supply chain generates a positive impact in each of its stages and difficulties. The purpose of this article is a systematic investigation of the impact of supply chain management in the meat industry, subject to analysis and the impact it can have on the profitability of companies in the sector. It will also provide the reader (academic, professional or producer) with information on the situation, based on different authors, countries, and types of food.
